Ancient technology still tricks the desert. At an experimental farm at Avdat in the central Negev, Israelis grow crops using only techniques available in antiquity. They plant at the onset of the winter rainy season, on the valley floor where low dams between cultivated plots help retain the meager rainfall and runoff water where it is most needed.
